Cucumber Avocado Chicken Salad
I used my Ninja Foodi to air-fry some chicken breast the other night. This cooker is AMAZING! I seriously can’t say enough about the Foodi.
It makes meals super fast.
One pot and done if I want.

Anyway, back to the Cucumber Avocado Chicken Salad.
I cooked chicken breasts and had them heavily seasoned with black pepper, onion, garlic powder, and Paprika. Which I find to be a critical role in this new recipe.
I diced the Cucumber, Chicken, and Onions nice and small.
I then weighed all my ingredients using my Amazon Basics Food Scale.
The food scale gets the most use in my kitchen. I like to weigh everything out to get the best picture on my macros. I have even found that measuring ingredients for baking goodies makes for a better quality product.
The Greek yogurt, Avocado, Lemon, and spices all go into the food processor and are spun around until nice and smooth.
Then, the yogurt-avocado mixture goes into a bowl with the chicken and veggies to be stirred and weighed. To then divide into individual portions.
This recipe here serves 4.
The best part about this recipe is that you can use it in many ways throughout the week!
Eat It On Its Own.
Portion it out and eat it as a quick snack between meals. The healthy fats from the avocado will help satisfy you until your next meal.
Use As A Dip.
Use one serving throughout the week as a snack. Use sliced veggies or whole wheat crackers and scoop the mixture up.
As A Topping
Top off some chunked-up bell pepper with the chicken salad.
Or add it to the top of a green garden salad to make it a bigger meal.
Use It In A Wrap
Lay out a tortilla wrap, spread out one serving of the chicken salad, and add other veggies like spinach, bell pepper, or even more cucumber to make a delicious lunch or dinner.
Cucumber Avocado Chicken Salad

- 1/2 Cup Cucumber (Finely Diced)
- 1/4 Cup Onion (Finely Diced)
- 1 Whole Avocado
- 9.5 Oz Chicken Breast (Cooked and Seasoned Well – I used black pepper, Onion, Garlic Powders, and Paprika.)
- 2/3 Cup Plain Greek Yogurt
- 1 TBSP Lemon Juice
- 1/8 – 1/4 TSP Chili Powder
- To Taste, Salt And Black Pepper
- Dice the veggies and chicken.
- Add Greek yogurt, Avocado, Lemon, and Spices to a food processor and blend well until smooth.
- Combine all ingredients in a separate bowl and eat at your pleasure.
- Keep leftovers in an airtight container in the refrigerator.
